Date Night 6 of 2017: Minneapolis Institute of Art

When setting our 2017 marriage goals (which you can see HERE) we decided we were going to be intentional in dating one another. This meant regular date nights, trying things we haven’t done in the area or revisiting favorites.

Over my Spring Break, we decided it would be a good time to fit in an early April Date Night. Minneapolis Institute of Art was first on the list, and I thought it would be a great thing to do during the day while on break. I also thought it would be a good time to go to Black Coffee and Waffle Bar, which I have been dying to try!

The Apple Streusel Waffle did not disappoint! We decided just to split the one waffle to save a little bit of money, but I easily could have eaten the whole thing myself.

After finishing our waffle, we drove to Minneapolis Institute of Art (MIA) right as it opened. I went this past summer with my mom and sister, but Trevor had not yet been, so I was excited for him to go. I was also eager to visit again as it’s been a while since I’ve visited an art museum (since July when they visited).

Overall, I really enjoyed seeing some of the things I had not seen the first time and it got me SO excited for our upcoming trip this summer to see so many great museums! I’ll be sharing more soon about our summer plans.

Date Night 5 of 2017: Bubba Gump’s

When setting our 2017 marriage goals (which you can see HERE) we decided we were going to be intentional in dating one another. This meant regular date nights, trying things we haven’t done in the area or revisiting favorites.

Date Night 1 of March was such a blast, I’m glad we made it happen early(ish) in the month to try to hit 3 this month.

Bubba Gump’s was next on our list for Date Nights. We went to Bubba Gump’s last year for the first time and super loved it. When we were coming up with a list of places to go for Date Nights this year, this was a no-brainer. While a little pricier than we normally eat out, it’s still convenient as it’s at MOA.

I got a super amazing Mango Frozen Margarita and Shrimp New Orleans. Honestly, I don’t remember what Trevor got and he’s not responding to my texts while at work. 😂

While it wasn’t a “fancy” date, it was so nice to just go out to eat and enjoy lunch together after church!

While we didn’t hit 3 dates this month, the 2 we did have were CERTAINLY great!

God is So Good

God is So Good is one of my students’ favorite songs to sing as a part of Jesus Time, Chapel, or Closing Chapel. You can tell by how loudly they yell “Yes, He Is!” at the end of each line of the song, even when those aren’t necessarily the “right” lyrics.

Normally by a Saturday evening at this time, I’m in my jammies, sitting on the couch watching Netflix. Don’t get me wrong, that is an accurate description of what I’m doing. However, it’s all the other things that have happened today that make me be reminded of how truly good God is.

This weekend (Friday + Saturday) I attended the Minnesota Early Childhood Educators Conference at Concordia, St. Paul! I was pretty excited about the conference since I read the brochure with the session descriptions and because I knew my old practicum teachers/coworkers would be there as they helped lead sessions, worked on event staff, and attend sessions. I also got a day from the kiddos on Friday to attend. As the sessions came to an ended today, I took some time to reflect on all of the amazing information I received. Like wow, we as educators are entrusted with such a huge and overwhelming task, but God enables us to do it all for His glory and honor. WOW! It’s just still so shocking to me that I get to be a part of the development of so many humans, in their faith, in their emotional life, in their social skills, in EVERYTHING. While parents are obviously the number one influence in a child’s life, it’s so wonderful to be a part of a collaboration and team to help those kids grow.

On my way home from the conference I was also reflecting on the importance of making sure I care for myself to be able to care for these kids. So, I’m going to try to start working out and getting healthy again. College was like a million tries to get back into shape from high school and a million fails as well. Either way, I’m going to put effort into it again. I ran for just over a mile and felt great after!

Tonight I also used my new birthday pan from my parents to make banana bread with some bananas that were getting old. It just finished and tastes so good.

I don’t know if it’s just the fact that I had a wonderful time at the conference or if it’s that our apartment is on the cleaner side, I’m just so thankful God has blessed me this weekend with so many reminders of His love.

So here’s to a wonderful next week with many more of God’s blessings so obviously in my life!

Date Night 4 of 2017: Photos

When setting our 2017 marriage goals (which you can see HERE) we decided we were going to be intentional in dating one another. This meant regular date nights, trying things we haven’t done in the area or revisiting favorites.

February, Trevor and I only hit one of our two date nights, so we’re going to hit THREE in March. This past weekend we did our make up date night as a day trip down to Madison area. We got up really early (it was Daylight Savings….) and headed to church where my Dad is a pastor. It was nice to see my family again, even if for a short bit. We got lunch at an old barn after church and hung out for a bit before Trevor and I had to get going.

We met up with Janae of Westrum Photographs for a session at Devils Lake State Park. We hiked (and were out of breath), saw some amazing views, and had soo many laughs. Trev & I aren’t super in love with our engagement or wedding photos, so this couples session meant SO much to us.

Honestly, the results are breathtaking. It took me twenty minutes to pick one to be my new Facebook profile picture because I freaking love all of them. Here are some of my (many, many, many) favorites.

I am oh so thankful for this session and to Janae for drawing my name out of the random giveaway I entered. I just keep looking through the pictures again and again and again.

I cannot wait to share more of the photos on my Instagram (go follow to see more): @mrselisebethrodriguez! I also cannot wait to continue sharing our Date Nights of 2017 with you all!

What’s Up: February Life Update

Wow, we’re already nearing the end of February! I was doing pretty well with blogging in January + was hoping that trend would continue throughout 2017, however, I’ve already staggered off on the consistency.

Anywho, here’s a little life update!

  1. I haven’t talked much about it, but I have begun a new job as a 3-year-old teacher where I did my student teaching last semester. I’m transitioning into the role + can’t wait for the classroom to be solely mine, although I’m trying to embrace + enjoy the transition right now. I’m loving getting to know my coworkers better + feeling more comfortable in my role there.
  2. Trevor and I have finally established the dates of our Europe trip. We will be booking tickets shortly, but all things are a go in regards to getting off work for the appropriate amount of time. I’m so excited for us to do our first international trip together! I also cannot wait to visit Amsterdam for the first time. That will be our first stop on the trip before we head on to London + Paris (which I am also super psyched for).
  3. I’ve officially made it a (new) goal of mine this year to try more local coffee shops! I love Starbucks + Caribou, but there are so many trendy spots in the Twin Cities that I need to give a try. So far, I’ve hit up Spyhouse (NE + Uptown locations, still need to try Whittier + Northloop locations) + Groundswell Midway! All of these places are so hip + cool + I cannot wait to support local stores by trying them out! I did end up taking advantage of my free birthday drinks at both Starbucks + Caribou, but other than that I have done well with drinking locally.

This next month I’m going to try to blog more consistently, but we’ll see how that goes…
